COOKING

Tradition is at the centre of the Umbrian kitchen, with dishes not always poor or popular. Little influenced from the nearby regions, it is based essentially on meat and products of the earth, that are used both for great occasions and in daily meals. It is a simple kitchen, not overly complex but honouring the flavours and tatses of good raw materials. The roots of the Umbrian kitchen arise from the time of the “Umbri” (the indigineous peoples preceeding the Etruscans, in the region between Perugia and Orvieto) and then from the Romans, with frequent use of legumes and cereals. We can identify three types of cuisine that roughly correspond to both cultural and dialectal divisions within the region.

Chef Enrico has always been a familiar face in the kitchen and now is using his love of cooking to teach to others great regional dishes from his home town: ORVIETO, Italy. Today he brings people into his kitchen to offer up a great new experience to travelers, tourists, students, friends, and families. After your cooking class, you will not just have learned how to make a few Italian dishes but you will also have made a friend in Chef Enrico!

FOR COUPLES AND SMALL GROUPS

Side dishes in Umbria usually include seasonal vegetables, grain dishes such as farro or polenta, and legumes such as lentils from Castellucio di Norcia. Farro is produced in the area of Monteleone di Spoleto. Due to its harse winters, the farro grown in this area is firmer than farro grown elsewhere in Italy and is enjoyed in soups, salads,

or braises. Umbria is also famous for its lentil production from Castellucio, a small hamlet in northern Umbria which harvests small light green to tan colored lentils that retain their texture no matter how you prepare them.


A beautiful farm a few kilometres out of Assisi, which produces 70% of the products that are used in the kitchen, thus giving our guests the opportunity to taste flavours from the past. Their products are environmentally friendly and organic, certified IMC. For a better environment, the farm is powered by a photovoltaic system...

For SMALL GROUPS it is possible to arrange a complete program according to your needs. A customised program will be devised in consultation with you and may run from 1 or 2 days to a week or more. Some couple or small groups like to stay on for a week and take advantage of a complete range of activities including excursions, guided visits, truffle hunting, tastings as well as many other optional activities and, of course, some precious rest time.
