Just 40 minutes by car from Orvieto you can find a hidden jewel, the only one of it’s kind in the area; a cheese producer that makes its cheeses exclusively from buffalo milk.


Buffalo milk mozzarella is well known in southern Italy, more precisely in the Campania region, which is why it’s strange to see a similar farm making this cheese on the border of Umbria. This small family owned business has been active since 1933, but has only been producing buffalo milk cheeses since 1999. Over the last ten years it has become more and more well known in the area. The farm’s young owner, Luisa, and her mother operate their farm with love and passion for their product, which is really one of a kind!

Together we’ll discover the origins of the famous buffalo mozzarella, starting from the source – the buffalo themselves! We’ll visit the farm with Luisa, who will tell us how this incredible cheese, famous around the world, is made.

Buffalo mozzarella (Italian: mozzarella di bufala) is a mozzarella made from the milk of Mediterranea Italiana buffalo. The term mozzarella derives from the procedure called mozzare which means "cutting by hand", separating from the curd, and serving in individual pieces, that is, the process of separation of the curd into small balls. It is appreciated for its versatility and elastic texture and often called "the queen of the Mediterranean cuisine", "white gold" or "the pearl of the table".

Many people don't know that Mozzarella cheese is traditionally made from water buffalo milk. Cheese from water buffalo, or Formaggio di Bufala is considered to be higher quality and better tasting than cheese made from cow milk.

Some of the cheese produced in the farm are: burrata, scamorza, ricotta and, of course, the famous mozzarella!
